Stuffed Turkey Burgers With Baked Sweet Potatoes

I love to cook. I use it as a method of relaxation. When I'm cooking, I'm not thinking about the paper that's due soon, what time I have to work this weekend, where am I going to squeeze in that meeting, the tub needs cleaning, and the nine thousand other thoughts buzzing around in my head. I'm sure any other working woman can attest.

Maybe not all women enjoy cooking, but when you have an easy recipe for a healthy,delish dinner for two, how can it not put a smile on your face. (And your dinner date's!)

*measurements may not be exact - this is my own recipe and I use the "little 'o this, little 'o that" method.

Turkey Burgers

1/2 pkg 85/15 ground turkey (I used Shady Brook Farms)
1 small yellow onion, diced
4 sprigs fresh parsley, chopped
1 egg white
1 cup bread crumbs
salt and pepper to taste

  1. place all ingredients in a large bowl and mix together. If mixture is still loose/watery keep adding bread crumbs until it's almost doughy. 
  2. Form into 4 thin patties and set aside

Burger Stuffing

a handful of baby spinach  (give or take, that was just my best guess at quantifying)
1 tsp minced garlic
1 tsp olive oil
1/8 lb fresh goat cheese
salt and pepper to taste

  1. heat oil in a pan over medium heat.
  2. toss spinach, garlic, salt and pepper in pan until soft and wilted.
  3. put spinach on cutting board and coarsly chop
  4. in a bowl combine spinach mixture with goat cheese 
  5. divide cheese and spinach mixture into two balls
  6. Sandwich each goat cheese and spinach ball between the patties you made previously and pinch the edges together to make two stuffed burgers!

Cooking Instructions
  1. Preheat oven to 375 degrees 
  2. Heat up enough oil to just cover the bottom of a fry pan
  3. place burgers in pan and cook about 5-8 minutes on each side 
  4. place burgers on a tin foil lined baking sheet and put in the oven for an additional 5-8 minutes until crisp and sizzling
  5. Serve on toasted English muffins.

Baked Sweet Potatoes
 
 Two medium sweet potatoes or yams
2tbs brown sugar
1/2 tsp cinnamon
1/2 tsp orange zest divided in two
butter to taste
  1. Preheat oven to 375 degrees
  2. pierce potatoes with a fork to allow for steam
  3. place potatoes on a foil lined baking sheet and bake for 45 minutes
  4. Split in half and take out the insides of the potatoes and mash in a bowl with sugar, cinnamon, orange zest, and butter and spoon back in potato skins
  5. Continue to bake for an additional 15 minutes 
  6. sprinkle with salt and serve!
